The French word croûte means crust. Croutons are often made from day-old bread which has been cut into cubes and seasoned with herbs, oil, or butter. The bread is then either toasted in the oven or tossed in a hot pan until crunchy. but it all started in 500 A.D...when soup is served in sops, aka pieces of stale bread....to make use of stale bread. nowadays...Croutons are considered an unhealthy salad topping and one half-cup of croutons can add around 100 calories to your dish unless the crouton is made from healthy grains and is baked.
